Baked Tilapia With Attieke And Onion And Tomato Salad

This baked tilapia recipe is made using Ghana's green pepper sauce and is served alongside attieke and a fresh onion and tomato salad. A simple yet flavorful combination that's sure to impress!
Ingredients
- 1 1/2 pounds or 2 medium tilapia (gutted and descaled)
- 1/2 cup/ 120 ml green pepper sauce
- 1/2 freshly squeezed lemon
- Sea salt to taste
- Oil for baking tray
- Attieke as needed
- Salt to taste
- 1 large onion
- 3-4 tomatoes
- 1 tablespoon oil from green pepper sauce or any good vegetable oil
- Salt as required
Instructions
- Wash tilapia and pat dry. Make small slits around the fish to help it absorb the marinade quickly. Place in a large mixing bowl, add freshly squeezed lemon juice, and sea salt to taste.
- Pour about 1/2 cup of green pepper sauce over the fish, making sure the fish is well coated. Cover and let it marinate for 30 minutes to an hour.
- Meanwhile, slice the onions and tomatoes and combine in a bowl. Add salt to taste and 1 tablespoon of oil from the green pepper sauce or any good vegetable oil. Toss together and place in the fridge to rest and absorb the flavors.
- When marinating time is up, preheat the oven to 200°C/390°F. Lightly brush a baking tray with oil. Carefully place the marinated tilapia onto the tray, pouring any remaining marinade on top.
- Bake the tilapia in the preheated oven for 10 minutes, then flip and bake the other side for another 10 minutes.
- To warm the attieke, place a colander in a saucepan filled with water, making sure the colander doesn't touch the water. Put it on high heat to bring the water to a boil. Place the attieke in the colander, add salt as needed, cover, and let the steam heat the attieke. Alternatively, use a microwave: place the attieke and salt in a microwave-safe bowl, drizzle with a little water, and heat on high, stirring as needed.
- Serve the baked tilapia with the warmed attieke, onion and tomato salad, and extra green pepper sauce.
