Omo Tuo

Omo tuo is a Ghanaian side dish made by cooking rice until it's very soft. The rice is then beaten or mashed to make it glutinous and formed into a ball. It’s commonly served with soup in Ghanaian cuisine.
Ingredients
- 1 cup rice
- 3-4 cups water or as required
- Salt as required
Instructions
- Rinse the rice and put it in a medium cooking pot. Add water and salt to taste.
- Put the rice on high heat and bring it to a boil. When the rice boils over, reduce the heat to medium and let it cook until all the water is absorbed and the rice is very soft when pressed between your fingers. Turn off the heat.
- With the rice in the cooking pot, use a wooden ladle to beat or mash the rice against the sides of the pot for it to become glutinous.
- Divide the glutinous rice into balls according to the required serving size. Serve with your favorite soup.
